Hello everyone,

It’s that time of the week again where, even though it feels as though time has continued to stand still, it is, in fact Easter weekend. On my walks, I’ve noticed the bluebells and daffodils have emerged and blossom is making way for the leaves on the trees. There’s a definite shift into spring. I haven’t been craving as many comfort foods now the weather is hotter, so enjoy this weeks selection.

Take care and stay observant because it’s important to keep thinking critically and use your logic and reason in these interesting times.

This isn’t a meal, but it could be a delicious breakfast and it really captures that feeling of summer sunshine.

This one is nice and simple, a one tray dinner that is healthy and delicious.

 
 

Slow Cooker Basil Chicken in Coconut Curry Sauce

I tend to eat a curry a week, and this one is as low-effort, maximum-flavour as they come. Serve with rice, lentils or whatever pulses you have in your cupboard.

Another pasta dish, because it’s so easy and simple and there’s plenty of peas and cured ham in every shop.
