It’s that time of the week again when we inhale, take a breath and go out into the world to queue. Popping into the shops isn’t an option around here, so I buy everything I can to last a week and fantasise that maybe, by the time I need to go shopping again, this will all be a distant memory.
The only consolation is that this spring is out doing itself with sunshine, so queueing does serve the added benefit of a nice dose of Vitamin D.

Pea, Ginger & Coriander Soup with Peanut Butter Bread

This bread has gone viral (in a good way) as people have hunkered down and wait for this moment to pass by baking their way through it. It is great either sweet or savoury. Add some chocolate chips for a sweet version.

 

Cheesy Ham & Broccoli Pasta

For those days when you want something quick and tasty. Adding broccoli or whatever greens you have makes you feel more healthy. No one can live by cheese alone.

BBQ Salmon Bowls with Mango Avocado Salsa

A lovely light, summery dinner which is super tasty and doesn’t require huge amounts of ingredients. Buy the mango and avocado ahead of time to ensure they’re ripe and use whatever fish or meat you have to hand.

 
 

Sweet Potato Topped with Quinoa Red Bean Chili

A great vegetarian dish which freezes easily, so you can make it in bulk and defrost as needed.

 
 

Quick Courgette Lasagne

Much as a I like to eat lasagne I’m put off by the amount of prep involved. This recipe does exactly as promised and doesn’t chain you to the kitchen for half a day!

Cheesy Root Vegetable Gratin

Pair this with some grilled meat or fish and you have a seriously gorgeous dinner. Instagram-worthy, as some might say.

Chicken, Leek & Mushroom Pie with Cauliflower Mash Topping

A great twist on a traditional favourite, the humble cauliflower is under-used in my opinion and only gets brought out to be covered in cheese.
