Hi everyone,

I know a lot of people are used to eating out and don’t often cook, so I’ve put together a weeks worth of meals that don’t need to many ingredients and you may have a lot of these things in your cupboard already. If you are new to cooking, now is a great time to begin!

I’ve put all of the ingredients into a pdf so you can print it out and take it to the shops. Some things may be out of stock so you might have to substitute here and there. I’ve chosen recipes that are simple, don’t use too many ingredients and are nourishing. The shopping list has servings for two people; adjust it as you need.

Cacio e Pepe

This recipe has three ingredients! Granted, pasta is currently highly prized, but if you can get your hands on some then serve with some vegetables or salad.

 
 

Slow Cooker French Wine and Mustard Chicken

This recipe has served me well over the winter. I use cider instead of white wine as it is a little sweeter. Add rice or potatoes to it or even some crispy bread.

 
 

Spinach & Mushroom Quinoa

Quinoa is a wonderful source of protein and you can eat this as it is or add some meat or fish on the side.

 
 

One Pot Creamy Cauliflower Mac and Cheese

Cheese makes everything better, so here’s a recipe with the added twist of cauliflower. Add a side of meat or fish if you fancy.

30 Minute Thai Peanut Chicken Ramen

Another Half-Baked Harvest recipe and it is absolutely packed full of flavour. I can’t recommend it highly enough.

 
 

Sweet Potato & White Bean Chilli

A simple, easy-to-cook recipe by Jamie Oliver originally designed for students not self-isolators. Substitute whatever vegetables you have and add some meat or fish if you’re that way inclined.

This is a a recipe I come back to time and time again. I make mine in a slow-cooker and it freezes beautifully.

5 Spice Apple Crumble & Ginger Creme Fraiche

Perhaps if I ate cake every day for breakfast it might make me feel better. Still, none of us want to leave quarantine a lot heavier than when we went in, so I’m limiting myself to a pudding a week (for now). You can use oats or flour if you can’t find ground almonds.
