Here in the UK we are entering week 2 of ‘self-isolation’. The fight-or-flight adrenaline rushes are now subsiding and we are facing the freeze. You may feel this as a lack of energy, lack of motivation and wanting to sleep a lot.

I’ve made another shopping list for the week; again it’s comfort food heavy because that’s what I’ve been wanting. And I have eaten cake for breakfast more than once this week.

Take care, stay safe and observant because it’s important to keep thinking critically and use your logic and reason in these interesting times.

One Pot Parmesan Roast Chicken & Cauliflower

This is one I come back to a lot; it can be prepared and in the oven in barely any time!

 
 

Spaghetti Carbonara

A carbonara hug-on-a-plate. Soothing, comforting and whipped up in minutes.

 
 

Melanzane Parmigiana

I absolutely love aubergines and this dish showcases them perfectly. Eat on its own or add a crisp, sharp salad on the side.

Ginger Sweet Potato Coconut Milk Stew With Lentils and Kale

A lovely vegetarian dish, you can serve this with some naan, flatbreads or chapatis if you’re feeling in the mood to bake (and have managed to source some oh-so-rare flour).

 
 

Sausage & smoky bean casserole

This is a great dish to cook if you’re new to cooking; it’s simple and packed full of flavour.

Leek, onion & potato soup with a wholemeal loaf

Homemade soup and bread is a timeless combination. Whether it’s placebo or not, eating this will make you feel better!

French ham and tomato macaroni cheese

Here’s a jazzed up version of mac’n’cheese, a little more grown up and chic than the normal version. Serve with salad or a homemade coleslaw.

 
 

Black Bean Brownies

Man cannot live by cake alone. It’s true, we need brownies as well. I was sceptical of these (I made sweet potato brownies once - never again!) because sometimes making things healthier ruins a delightful thing. Yet these really are good!
